How sev began

Two centuries ago, wheat ran short. Sev is what replaced it.

A Bhil invention, from a region that grew gram, not wheat.

Sevaiyan — fine wheat vermicelli — was the familiar preparation across northern India. In Malwa it was the harder one to make, so Bhil cooks reached for what the land actually gave them: gram flour. They seasoned it, worked it into a stiff dough, and pressed it through a perforated ladle into hot oil.

Wheat vermicelli softens. Besan did the opposite — fine golden strands that shattered under the tooth. It carried the name of its inventors, Bhildi Sev, and later that of the town which perfected it: Ratlami Sev, GI-tagged since 2015.

We are not part of that history and do not claim to be. Ratlam Darbar does not make sev — we buy it in Ratlam from the people who do, taste everything we list, and deliver it while the crunch still holds.
