What is Ratlami sev?

Ratlami sev is a thin, crisp gram-flour namkeen from Ratlam in Madhya Pradesh, spiced with clove, black pepper and asafoetida rather than chilli alone. It has carried a Geographical Indication tag since 2015, which means the name belongs to sev made in Ratlam the Ratlam way.

Sev, namkeen, mixture: which is which

Namkeen is the whole family of savoury Indian snacks. Sev is one member: dough of gram flour (besan) pressed through a die into strands and fried. Mixture, also called chivda, is a blend — sev, peanuts, flattened rice, fried dal and curry leaves tossed together. Chakli (chakri) is a different thing again: a spiral of rice or gram-flour dough, thick and hard-crunchy.

Ratlami sev is a specific sev. It is drawn finer than most regional sev, so it shatters instead of bending, and its spice leans on clove and pepper. That is why it tastes warm and aromatic rather than simply hot.

How teekha is it?

Less than its reputation. Black pepper and clove build heat slowly and leave a clean finish; chilli is a supporting note. At Ratlam Darbar the heat runs in three steps: Classic is mild, Royal and Lahsun are a step up, and Tikhi Mirchi is genuinely spicy namkeen for people who want it that way. The nashta it belongs on

  • Poha — the Malwa breakfast. Sev goes on last, a fistful, so it stays crisp. Recipe.
  • Kachori and samosa — crush one, add curd and tamarind chutney, top with sev. Street-stall chaat at home.
  • Dahi sev — cold curd, a pinch of chaat masala, sev on top. Three minutes.
  • Sev tamatar — a tomato gravy with sev folded in off the heat; eaten with roti. Recipe.
  • With chai — straight from the pack. The most common use in Ratlam by a distance.

Ingredients and keeping

Gram flour, edible vegetable oil, salt, red chilli, coriander, clove, black pepper, asafoetida, turmeric. No colour, no preservative. Sealed, it keeps about four months from the packing date printed on the pack; opened, an airtight jar and two weeks.
