Sev Tamatar
The Malwa classic. Tomatoes, spice, and sev folded in at the last second.

Ingredients
- 4 ripe tomatoes, roughly chopped
- 1 onion, finely chopped
- 2 tbsp oil
- 1 tsp cumin seeds
- 1/2 tsp turmeric
- 1 tsp red chilli powder
- 1 tsp coriander powder
- Salt, to taste
- 150g Ratlam Darbar Classic Sev
- Fresh coriander, to finish
Method
- 01Heat the oil and crackle the cumin seeds until they darken by a shade.
- 02Add the onion and cook until soft and translucent, about five minutes.
- 03Add the tomatoes with turmeric, chilli and coriander powder. Cook until the oil separates at the edges.
- 04Pour in half a cup of water, season, and simmer for five minutes into a loose gravy.
- 05Take the pan off the heat. Fold in the sev just before serving so it keeps its bite.
- 06Finish with coriander and eat immediately, with roti or plain bread.
