Poha + Sev
Breakfast in Malwa is not finished until the sev goes on top.

Ingredients
- 2 cups thick poha, rinsed and drained
- 1 onion, finely chopped
- 2 tbsp oil
- 1 tsp mustard seeds
- 8–10 curry leaves
- 2 green chillies, slit
- 1/2 tsp turmeric
- 1 tsp sugar
- Salt, to taste
- Ratlam Darbar Classic Sev, a generous handful per plate
- Lemon wedges and coriander
Method
- 01Rinse the poha until soft, then leave it to drain fully. Wet poha turns to paste.
- 02Temper mustard seeds, curry leaves and green chillies in hot oil.
- 03Add the onion and fry until golden at the edges.
- 04Stir in turmeric, then the poha, sugar and salt. Toss gently and steam covered for three minutes.
- 05Plate it, squeeze over lemon, and bury the top in sev.
